It doesn’t matter that you never get to see what your student is writing, it just matters that they do it. Give them a book and new pen and ask them often if they’ve been writing in their journal.
Another way to use journaling to improve writing skills is to give a student prompts from which to write. The goal is not to judge or grade their writing, just to encourage them to do it! For instance, you may have them summarize their day or ask them to describe the last dream they had. There aren’t any rules other than to write about the prompt. It doesn’t matter if their grammar and spelling are rough, the focus is on the process, not the result.
